Who doesn’t love to start the morning with fresh, homemade pancakes? I’m personally not a fan of store purchased mixtures or ready to eat pancakes, instead I prefer a healthier option. I found a recipe for healthy protein pancakes online but I decided to change a lot of ingredients and this recipe is my personal favorite. The texture is soft and rich – just like regular pancakes, but filled with a lot of nutritional benefits to start your day healthy instead of sugary.
Ingredients:
- 1/4 cup Oat bran
- 1/2 cup Cottage cheese
- 2 Eggs
- 1 tbsp. Protein Powder (optional)
- Pinch of salt
- Pinch of cinnamon
- Pinch of fresh orange chest
- 1/2 cup fresh seasonal fruits
Method:
- Place all of the ingredients in the same order as posted above into a food processor and combine well
- Heat up a pan with a little bit of oil or butter until hot and reduce heat immediately after back to low
- Put 1/4 of the mixture into the pan for 2 min.
- Carefully flip to the other side and continue to cook for another 1-2 min. or until light golden
- Top the pancakes with fresh, seasonal fruits and a tiny bit of maple syrup and enjoy
