I recently had a delicious recipe for grilled sweet potato slices with beef so I decided to recreate it at home as a vegetarian option. It is super easy to prepare and a fun dish as an appetizer or a side dish variation. You can add basically everything you want on top of the sweet potato, my personal favorite is smashed avocado with tomatoes and radish. Other delicious toppings are cottage cheese and peer or greek yoghurt with small pieces of cucumber and garlic. Give it a try and be creative with your toppings.
Serves 4
Ingredients:
- 2 Whole sweet potatoes
- 1 Whole avocado
- 1 Radish (sliced)
- 2 Cherry tomatoes
- 1 tbsp. Lemon juice
- Salt & pepper to taste
- Pinch of red pepper flakes
- Pinch of fresh lemon zest
Method:
- Peel sweet potatoes and cut into 1/4-inch thick pieces and sprinkle with a little bit of salt
- Heat up a grill pan with oil and grill sweet potatoes from both sides (between 3-6 min. per side, depending on pan)
- Open avocado and mash it together with salt & pepper, lemon juice and lemon zest, combine ingredients well
- Remove potatoes from pan and garnish with radish and tomato, additionally add some watercress and serve immediately
