A traditional fall recipe I enjoy every single year after we moved to the USA is Pumpkin Spice Latte. Since I’m not a huge fan of highly processed foods and sugary drinks, I try to stay away from coffeehouse chain purchased lattes and decided to create my own recipe. You can add sugar or sugar substitutes if you don’t like a complete raw version of this drink, I prefer it without.
Serves 2
Ingredients
- 2 cups of 2% milk (soy or almond milk are great dairy free substitute)
- 2 tbsp organic pumpkin puree
- 1 tbsp organic vanilla extract
- ½ tbsp Pumpkin Pie Spice
- pinch of red pepper
- ½ cup strong and hot coffee (or 1 to 2 shots of espresso – about ¼ cup)
- pinch of cinnamon
Method:
- In a saucepan, whisk together milk and pumpkin puree. Cook on medium heat on the stovetop until hot but do not boil.
- Remove the saucepan from heat, stir in vanilla extract, spices and coffee.
- Divide the mixture between two mugs. Sprinkle with cinnamon. Enjoy!
